I wanted to experiment with tuna besides the mayo & relish sandwich.
I made them both and it was a tie.
So here are two to try:
Basic starter - mix:
1 can tuna, drained
3 T plain yogurt
2-3 T sweet onion, minced
2 t lemon juice
then:
For salsa tuna, add:
1 c red kidney or black beans, drained
1/4- 1/2 c favorite salsa
1/2 c baby spinach, chopped
shredded cheese to taste
salt and pepper
Mix well
This tasted good on top of warm quesadillas
For sweet tuna, add:
1/2 c carrot, shredded
1/2 c golden raisins, chopped
1/2 c baby spinach, chopped
3 T orange juice
Mix well. This tasted good on toasted whole grain bread.
Either one is a nice change from the usual!
