Boil
6-7 red potatoes, cubed
until tender. Drain.
Place in saute pan with
3-4 zucchini, cubed
1 T olive oil
Saute until zucchini glistens then sprinkle with
2-3 T Herbes de Provence*
In separate pan, cook
1 lb ground turkey
Crumble and drain then add to squash and potatoes.
Stir well and sprinkle with salt and pepper to taste.
Serve warm.
*(any combination of dill, thyme, rosemary, marjoram, sage, savory, oregano, basil, garlic)
