Kolhapuri Masala

Egg curry from western India w ith my twist - no tomatoes, mild spices and served with yogurt to make it creamy and filling. You will need some garam masala - look for it on the asian aisle or in the Asian market.  It's quick for a curry but will take at least 30 minutes the first time.  You'll need a food processor of some kind. Serve it in a bowl and eat with Naan, Chapati or a flat bread that works for dipping. Dad really liked it. I thought it was a nice, light dish (if a bit warm) for this summer evening. Make 4 hard-boiled eggs - peel and cut in half length-wise Place a red onion , peeled and quartered in a food processor along with 1 inch of ginger and 3-4 garlic cloves  and process to a rough paste. Sillsallad "Don't let the title scare you" (Herring Salad)

I love that in Sweden root vegetables are called  rötfrukter , literally "root fruits" since n utritional speaking, this is truth (they have a lot of sugar).   The liberal use of them in Scandinavia prompted me to experiment and I like more of them than I ever had believed I would. Once again, how you cook things makes all the difference! Here is a recipe that changed my mind about BEETS ...and herring for that matter. Every classic Scandinavian food cookbook I have looked at has a version of this recipe.  It is really a terrific potato/beet salad. Easily made ahead, transportable and a side or a complete meal on a warm summer day. Friends who think they are not going to like it are surprised that they do... and then they go get a second serving. I thought I had posted this a long time ago. Better Baked Lentils with eggplant

My legume experiments continue... The original Australian recipe that inspired this one left out a few steps and also called for 2 hours of baking the eggplant... "ain't nobody got no time for that!" Plus, it also required ingredients that I just can't get here in the states. And you will still have to go to the store ahead of time for this meal. It was so intriguing that I carried on and here is my version. The eggplant (which I usually do not like) was so soft it was a nice contrast to the other ingredients that are an explosion of different flavors. I don't think I have ever eaten something so unique. Dad wants to eat it once a month, he liked it so much. I would have never guessed! E heard the word 'lentil' and his taste buds shut down. He still ate it. Naan Salad 'Sandwich'

As you know, I have been experimenting with different legumes. I made dahl tonight and wanted to pair it with a good contrast. (when I find my favorite recipe for that, I will share.) I found a fig salad that sounded intriguing but... I didn't have any figs (surprise- not!) But I did remember I had fig jam in the cupboard. So, this is what I came up with and we all loved it. I am not going to put amounts because it's just an assembly. Make one per person. Layer a slice of Naan bread with a thin layer of  fig jam Then put a few  torn pieces of goat cheese on top. Layer some mixed baby greens on top of the cheese.   and drizzle with olive oil and Basalmic vinegar Then lightly sprinkle it with salt and pepper . *Dad added chicken to it the next day and said it was delicious so I guess it works as an entree too. Dansk kartoffelsalat - Danish potato salad

Backstory is that B wanted to try some radishes so we had them in the fridge. When I saw a 1974 version of this classic salad that used radishes, I let it inspire me. I especially appreciated that there was very little mayo and the herb infused vinegar give the potatoes a fresh, tangy taste. Boil in salted water, until soft 1 lb new red potatoes cubed or l large red potato cubed (it's ok if it a bit more than 1 pound)  Drain and immediately combine with dressing, the hot potatoes soaks up the flavor better.  - see dressing instruction below Meanwhile, make 2 just hard boiled eggs  and chill them in ice water. European BBQ potato dinner

An interesting twist on sauce- we thought it tasted somewhere between orange chicken sauce and a tomato based BBQ sauce. I changed up the recipe into a quick dinner or side dish. You can add meat or not. Make the sauce while you are cooking the potatoes. In a hot skillet, fry 1 Tb butter 3 red potatoes, cut into thin slices 1/2 red onion, chopped when the potatoes start to soften, push to one side and brown over med-hi heat 1/4-1/2 lb thinly sliced pork loin or chicken pieces When the down side is brown (about 3 minutes), sprinkle with salt and pepper then turn over and sprinkle with salt and pepper again. when browned on all sides, stir together into the potatoes and onions. Add 1 Tb dried or fresh rosemary, smashed in a mortar Cover, reduce heat, stirring occasionally until the potatoes are done to your liking, I seasoned it with salt and pepper again. Norge Tacos

Yes, they called them tacos. I adapted this recipe to my ingredients, keeping the spices nearly the same. The flat bread you serve them on is up to you unless you want to quickly make some tunnebröd - but then they might be Swedish tacos! It is a bit time consuming so I would recommend cooking the meat up the day before. It was delicious even if it is nothing like anything we call tacos here in the western US. Brown over med-hi heat 1/2 Tb butter, just to coat the bottom of the pan 1 lb pork belly, cut into small strips or cubes (you may need to do it in two parts if you do not have a wide, flat bottomed pan) When there is no longer any pink, add 1 onion, chopped 1 t cumin, ground 1 t allspice, ground 1 t cloves, ground Stir together and reduce heat to medium, cover and let cook 1-1/2 hours or so, stirring regularly. Nordic Barley 'Risotto'

I found some barley in the cupboard... haha I know I bought it in the bulk section but I couldn't remember why. So I searched around for something to make and found this take on risotto using barley instead of arborio rice. Dad loved it and took it for lunch the next day apologizing that he didn't leave any left for the rest of us. Honestly, B & E didn't mind. I thought it was quite tasty and it was definitely nutritious. Steam 1 beet (red or golden),  I use peeled, cooked beets from Costco to save time sometimes. Sauté 2 T butter 1/2 onion, chopped When onion is glistening, add 1 c barley 1 parsnip, chopped 1 beet, cooked & chopped (from above or precooked) allow everything to toast, slightly, then add 1 c at a time , 3 c warmed chicken broth wait to add each additional cup until the barley has soaked up the existing broth When the barley is al dente, you can add cooked chicken if desired. Mexetti Squash

So I wanted to use the spaghetti squash but I wasn't in the mood for the usual Italian meatball pseudo-spaghetti. I also wanted something just as quick and easy so I browsed around on the internet and got an idea to use Mexican flavors. Here is what I served everyone tonight so we can remember it. There are no real measurements since every squash is a different size. Cut a spaghetti squash in half and remove the seeds. In a microwaveable dish, place one half skin side down so it can be filled with: cooked, cut up chicken diced Hatch chiles zucchini, chopped finely red bell pepper, chopped finely onion, chopped finely OR onion powder sprinkled on top Sprinkle it all with a little salt, pepper and cumin and shredded Jack, Manchego or other cheese Pour some enchilada sauce over it all. Rainy day Farro with chicken

     This tasted really good on this cold and rainy March evening.  I still had Farro (an Italian wheat cousin with more nutrition than brown rice) in the cupboard so I searched around for farro recipes and came up with this version. Your dad wants to eat it again (and me, too) so here it goes down on record.  I didn't really measure the ingredients so I will do my best to come up with good estimates. Sprinkle generously 1/2 - 1lb cooked chicken in large chunks (off a rotisserie chicken works well) with oregano, salt and pepper and drizzle about 1 Tb apple cider vinegar & ! Tb canola oil  over it & set aside. I think warming it a bit will help the flavor soak in the chicken but it isn't necessary. This is the meatloaf recipe everyone liked better than I did.  I still favor my Grandma Anderson's recipe but since the family liked it, here it is. In a small bowl, combine to soak 1/2 c milk 1 egg 1 c toasted bread, cubed or 1/2 c dried bread crumbs Let stand 5 minutes. In hot skillet, sauté 1/2  medium onion, diced 1 T butter Remove from heat, add 1 t fresh chopped parsley or 1/2 t dried Allow to cool. Mix together: 1 lb ground beef 1 T ketchup 1/2 t salt 1/4 t black pepper 1/4 t paprika 1 clove garlic, minced or generous sprinkle of garlic powder  1/4 t thyme 1/2 t Worcestershire sauce Add in cooled onion & parsley mix combine well then add in the milk-crumb mix ture Shape meat into a loaf or into a loaf pan Bake at 350ºF for 1 hour Turns out if you want, you can shape them into patties and fry in butter until cooked through and have single serving meatloaf burgers instead of one big loaf.

This brought back childhood memories.  It tasted just like one of the only fish dishes I had liked as a child.  Now, I like a lot of fish but this was delicious and easy.  I think it might sway someone to eat more fish.  It takes just a bit over 15 minutes. In a hot iron skillet, place 2 white fish fillets (about 6-8 oz each) (halibut, tilapia, flounder...) and pour over the top 1 cup fish stock (or chicken stock or water with a tablespoon of Thai fish sauce) Cover and simmer for 8-10 minutes Meanwhile, mix 1 egg yolk  2 T milk Set aside. Remove cooked fish and keep warm on serving dish Reserve 1 cup of the hot fish stock (it's ok if there is a bit less than a cup) In the hot skillet , over med-hi heat, melt 1 T butter  2 T flour whisk quickly to form a roux Pour in gradually 1/2 c milk whisking constantly to make a smooth sauce Next add in the reserved fish stoc k Stir constantly and simmer for about 5 more minutes until thick and ...

15 Mar 2016 Flygande jakob (1989 Swedish Chicken Casserole)

Rumor has it this is a recipe everyone who was a kid in 1980s Sweden will recognize.   I laughed when I saw the ingredients but as it was recommended I had to try it. Back then it was served on white rice with shredded iceberg lettuce and cucumbers.  I updated it slightly. It also called for Heinz chile sauce which I did not have access to so I went with a green taco sauce I had in my cupboard. It is super easy, just assemble the ingredients and cook it. Here it goes.  But seriously, you will find yourself reaching for seconds! In a 9x13 baking dish, arrange/spread evenly/layer: about 2 c cooked cubed/bite-size pieced chicken 2-3 large bananas split lengthwise and cut into chunks (each piece is a long 1/8 of banana or so) 1 1/4 c heavy cream WHIPPED a generous 1/3 c red or green chile or taco sauce as mild or hot as you prefer Bake at 435 degrees for 30-45 minutes, until surface is golden brown, caramelized Let casserole REST! This tastes great served cold, also. Bring salted water to a boil to prepare 1 -1 lb pkg cheese tortellini Drain and set aside for combining. Place under broiler in oven for 3-4 minutes on each side.(until flakes easily) 2 small tuna steaks   (or you can use a can of tuna, drained) Flake with fork into bite size pieces. Sauté in large pan: Olive oil 1 colored bell pepper, chopped ¼ c red onion, chopped ¾ t fennel seeds, crushed Mix together ½ c milk 2 t flour ½ t dry mustard ½ t pepper Add this mixture to sauté pan and cook until thickened. Add in the tuna and tortellini.   Warm thoroughly about 3 minutes. Serve on bed of   baby spinach .

It is strange to see lettuce being cooked but it worked. Prepare salted, boiling water to cook: 1-16 oz pkg of gnocchi Drain and keep warm. Over medium heat, melt ¼ c unsalted butter then add 2 T onion, finely minced sauté about 5 minutes, then add 1   generous handful of cubed pancetta or ham 1 head Romaine lettuce, washed and sliced roughly ½ t salt 3 c fresh shelled peas or thawed frozen peas Cook until peas are tender, about 5 minutes In separate small saucepan, cook until thickened: ½ c heavy cream Pour over pea mixture, add gnocchi and combine all gently Sprinkle with salt and pepper and serve immediately. original recipe from Relish.com

These are sold at the Scandinavian Festival in Junction City, Oregon. It may be a Swedish-American recipe but regardless they are delicious. Servings: 4-6, Prep: 20 mins, Cook: 20 mins 1- Melt: 1 tablespoon butter  Crumble in 1 lb ground beef  and add: 1/4 cup chopped onion 2 tablespoons chopped fresh parsley, dried is ok  1/4 teaspoon ground allspice 1/4 teaspoon dried dill weed 1 pinch ground nutmeg salt and pepper 2 large red potatoes, grated  Cook and stir until meat is browned and potatoes soft. Remove from heat and stir in: 2 cups shredded Jarlsberg or white cheddar cheese  Set aside while preparing dough Puff Pastry sheets work perfectly for the crust, a big time saver.  Roll out the pastry sheet to about 1/8 inch thick and then cut into a triangle.   Brush sour cream on the puff pastry before adding 1/3c - 1/2c meat filling.  Fold the dough over into a smaller triangle , then pinch ...

12-30 Potato Tomato Cheese Tart

Anni says she made this back when she didn't know how to cook so it must be easy. :) Microwave in covered large bowl: 4 c thinly sliced Yukon gold potatoes (not peeled) Set aside. Combine 1 c Gruyère cheese, grated (or Asiago) 1 c Cheddar cheese, grated Set aside. In hot skillet, sauté 1 T olive oil 1 T minced garlic Remove from heat and season with salt and pepper Gently mix potatoes with garlic mixture. Cover again and return to microwave for 3-5 minutes. Arrange layers of potatoes, cheese mixture and deli ham (optional) 5 large Roma tomatoes, thinly sliced in 9 inch pie pan. Cover with parchment paper and foil. Bake 40-50 minutes at 425 degrees then uncover and bake 15 minutes more .

12-24 Köttbullar - Swedish Meatballs

Traditional Christmas Eve dinner - based on our Swedish-American traditions.  It is somewhat labor intensive (for my recipes) but this isn't a problem since we usually all make them together on Christmas eve. I think it helps the time go by faster so we can open presents :) Worth noting, as you know, our Swedish cousins, Ola & all, would never serve them in the gravy, they always serve the meatballs and gravy in separate dishes. The meat mixture can be made ahead of time, if needed. Cook the meatballs before freezing. Then thaw and cook in a gravy for a meal (The problem with too far ahead is no drippings available to flavor the gravy). Soak for 10 minutes in large mixing bowl: 1 1/2 c soft breadcrumbs 1 c half and half OR 1/2 c cream and 1/2 c milk Meanwhile, sauté: 1 T unsalted butter 1/2 c onion, chopped When softened, add to crumb mixture and add: 1 lb ground beef 1/2 lb ground pork 1 egg 1/4 c fresh parsley, minced 1/2 t salt 1/2 t ground ginger 1/2 t ...

12-21 Swedish Beef Stew

This is a simple and easy dish that is traditionally served outdoors on those long summer nights in Sweden. I can see how it would taste good there but it will sure hit the spot during a snowstorm, too. This bakes for 2-3 hours and does all the work during that time. You can double it to feed a crowd of 6-10. Set oven to preheat at 350˚ Place your dutch oven stovetop and heat on medium heat, when pan is hot, add in : 1 lb beef chuck/stew meat, cut into 1 inch cubes 2 onions, sliced Stir and turn the beef to brown on all sides to seal in juices. (this is the secret) When all are browned, add: 3 - 4 med potatoes, peeled and cubed OR 1 1/2 lbs of baby red potatoes, halved 4-6 carrots, peeled and sliced thickly  or replace some with parsnips 1/2 T salt 1/8 t white pepper or 1/4 t black pepper Now pour in about 2-3 c water -enough to just cover all the ingredients Cover with lid, remove from stovetop and place in a 350 degree oven about 2 1/2 - 3 hours until everythin...

12-17 Tonkatsu (Japanese pork chops)

We used to make these often. Dad learned how to make them when he lived in Japan. You need to coat the pork before frying it. To prepare the pork for their coating, pound between two sheets of plastic wrap until very thin: 2 boneless pork chops Mix together: 1/2 t salt 1/4 t pepper 1/4 c flour Coat the pork on both sides then coat pork in: 1 egg, beaten Next, coat pork in: 1/4 c Panko bread crumbs (look on the Asian aisle) Place each pork chop in a hot skillet with a generous amount of Sesame oil Fry each side until golden brown. Place on paper towels to drain. Serve on hot rice with Asian sides or salads.
