Thanks to Kristine who figured out the Italian Quinoa salad from Market of Choice!
Rinse and cook 15 minutes:
3/4 c quinoa
1 1/2 c water
Set in fridge to cool.
Prepare dressing:
2 T canola oil
2 T olive oil
2 T rice vinegar
juice of 1 lemon
Salt and pepper
Whisk well.
Prepare veg:
1/2 c baby spinach, chopped
1/4 c red onion, chopped
1/2 c tomatoes, chopped
1/2 c feta, crumbled
Toss together then stir gently into cooled quinoa
Pour dressing on top, mix and place in fridge 1 hour.
Perfect salad to go!
