Saute:
2 T olive oil
1 onion, chopped fine
4 cloves garlic
1 28 oz can diced tomatoes
salt and pepper
Bring to a boil, then add
10 curly edge lasagne, broken into 2 inch pieces
1 small zucchini
1 small yellow squash
When squash is softened and pasta al dente, add:
1/4 c shredded fresh basil
1 c ricotta or cottage cheese (pureed)
When warmed through, serve.
