06-08 Italian Tuna Bread salad

Toss together: 
1 shallot chopped 
1 handful cherry tomatoes, halved 
pinch of salt to taste 
1 can Italian tuna, drained (In oil if possible but regular works fine) 
1 c white kidney beans, 
drained 1 handful olives, pitted and sliced 
a couple handfuls of cubed crusty bread (Italian, French loaf) 

 Dressing- 
Whisk together: 
2 t Dijon 
T balsamic vinegar 
2 T olive oil 
salt & pepper 
Combine with tuna mixture and top with fresh basil
