06-20 Easy Rosemary Chicken

Line rimmed baking sheet with Silpat or cover with foil
Distribute evenly on baking sheet:
4 small drumsticks or thighs
2 lg red potatoes, cut into wedges
1 red onion, sliced
Drizzle with
1 t olive oil
1 1/2 T fresh rosemary, chopped
1 T garlic, chopped
1/2 t salt and pepper
Toss to coat chicken and veggies evenly
Bake at 500 degrees for 15 minutes, remove from oven and turn over ingredients
Replace in oven for 15 additional minutes.
Drizzle with balsamic vinegar at serving.

Be sure to coat all well so it doesn't burn, drizzle with additional oil if necessary.

 Cousins in Sweden served a fish meal that B really liked!  [That is a huge compliment as it's not her favorite protein.]  Nic makes it without a recipe so this is a general guide.  Layer a casserole with a bed of zucchini slices and add a layer cod pieces . 01-25 Dad's Quick Italian Meatballs

Mix 1 lb lean ground beef 2 eggs 1 c Italian bread crumbs 1/2 c spaghetti sauce (more or less, see how it looks) The longer you mix/beat them, the more tender they will be Form meatballs and bake at 350F about 12 minutes Use in meal immediately or freeze for later Put in spaghetti or any pasta will work. Meatball sandwiches would be good too!
