Boil
1 lb gnocchi (vacuum packed is best)
and reserve 1/2 c cooking water and discard the rest
Brown cooked gnocchi for 4 minutes in
olive oil
add 6 slices of ham, shredded
cook 4 minutes
add 2 garlic cloves, minced
cook 30 seconds
add 1/4 c toasted pine nuts
3/4 c Gorgonzola cheese, crumbled or substitute*
1/2 c reserved cooking water
1 t lemon juice
Stir well and remove from heat and stir in
2 oz baby spinach, chopped
We substituted Parmesan and feta and it was delicious!
This recipe serves 4 people, 5 if served with salad and another side... but it will leave them wanting more =)
