Here is the basic recipe for the watermelon salad we saw on Chopped...
Try mint instead of parsley, or anything else you can think of.
Combine:
1/4 c minced parsley
1/4c minced basil
1/8 c lemon or lime juice
Then add in:
5 cups of watermelon cubes
1 pint red or yellow grape, pear or cherry tomatoes
1/2 med red onion, chopped
Refrigerate until serving.
