This tortilla soup is SO easy! Makes about 8-10 servings.
Combine all the ingredients in a large pot or slow cooker.
about 4 chicken breasts, cooked and cubed or 2 cans cooked chicken
6 c chicken broth
1 onion, chopped or 2 T dried onion
1 can kidney beans, drained
1 can pinto beans, drained
1 can black beans, drained
1/2 package frozen corn or 1 can corn
3-4 tomatoes, chopped or 1 can tomatoes, chopped
2-3 T taco seasoning (see 04-26) or 1 envelope taco seasoning
1 envelope ranch dressing mix (look for the no MSG brand)
Cook on med-lo until heated through about 20-30 minutes
Or on low setting in slow cooker for about 3 hours
Serve with fresh cilantro, avocado, shredded cheese, tortilla chips...etc.
