04-19 Warm German Potato Salad

Dad's roots here. Maybe that's why we like it so much =)

Boil:
1 1/4 baby red potatoes, cubed
Fry:
4 slices of bacon
Set aside and crumble bacon
Wipe pan with paper towel
BUT leave a bit of the drippings to saute:
1/2 c onion, chopped
Stir in:
1 T flour
1 T sugar
1/8 t pepper
1/2 t celery seed
3/4 t salt
Combine well and add:
1/2 c water
1/4 c vinegar
Stir until thick and bubbly.
Add in potatoes and bacon.
Serve warm and garnish with chopped hard boiled egg and fresh parsley

Great potluck or picnic dish. There are never leftovers!

 Cousins in Sweden served a fish meal that B really liked!  [That is a huge compliment as it's not her favorite protein.]  Nic makes it without a recipe so this is a general guide.  Layer a casserole with a bed of zucchini slices and add a layer cod pieces . Mix chopped flat leaf parsley (handful), softened butter (abt. 2 T), horseradish sauce (abt. 1 T) with a brick (8 oz) of cream cheese.  {It is easier if the ingredients are room temperature} Cover fish with sauce and bake for about 25 minutes at about 325-350 degrees [Swedish measurements are not equivalent]  Thin sauce with milk if needed. Serve with new baby potatoes baked in butter and dill and salt.

01-25 Dad's Quick Italian Meatballs

Mix 1 lb lean ground beef 2 eggs 1 c Italian bread crumbs 1/2 c spaghetti sauce (more or less, see how it looks) The longer you mix/beat them, the more tender they will be Form meatballs and bake at 350F about 12 minutes Use in meal immediately or freeze for later Put in spaghetti or any pasta will work. Meatball sandwiches would be good too!
