"Italian Green Beans" this is my favorite way to eat them!
Blanch in boiling water:
1 lb haricots verts, thawed (skinny frozen green beans but will work with thicker ones)
1 t salt
Cook no more than 5 minutes and rinse with cold water immediately.
Combine with:
1/2 c tomato, chopped
2 T basil, chopped
1 oz feta (herbed is fine)
Then drizzle on top:
2 T olive oil
1 t balsamic vinegar
Mix gently and serve immediately.
