04-29 Citrus Muffins

Line your muffin tin with cups or nonstick spray.
Stir together:
1 c flour
1/2 c whole wheat flour
1 t baking powder
1/4 t baking soda
1/4 t salt
Make well in the center of flour mix and add in:
1 beaten egg
1/2 c agave nectar
1/2 -1 t orange or lemon zest
1/4- 1/2 c lemon juice
1/4 c unsalted butter, melted
Stir until dough is moist and fill muffin cups 3/4 full
Bake at 375 degrees for 15-20 minutes

I like my citrus flavors strong so I use the larger amounts of juice and zest
but if you like them subtle, use the smaller amounts.

 Cousins in Sweden served a fish meal that B really liked!  [That is a huge compliment as it's not her favorite protein.]  Nic makes it without a recipe so this is a general guide.  Layer a casserole with a bed of zucchini slices and add a layer cod pieces . 01-25 Dad's Quick Italian Meatballs

Mix 1 lb lean ground beef 2 eggs 1 c Italian bread crumbs 1/2 c spaghetti sauce (more or less, see how it looks) The longer you mix/beat them, the more tender they will be Form meatballs and bake at 350F about 12 minutes Use in meal immediately or freeze for later Put in spaghetti or any pasta will work. Meatball sandwiches would be good too!
