Funny how we call anything with pineapple "Hawaiian" since when we are there, we see more macaroni salad than we do pineapples!
Make filling by combining in small bowl:
1/4-1/3 c cooked deli ham, chopped
2 T pineapple, crushed (drain well if using canned)
1 T coconut, flaked
set aside.
In medium bowl, whisk together:
2-3 large eggs
1 T water
salt and freshly ground pepper to taste
Heat skillet over med. heat. Melt
1 t unsalted butter
swirl to coat bottom of pan
when butter foams, pour in egg mix
Let set about 20 seconds
With spatula, lift edges so the runny eggs run under cooked areas
Continue until top is "dry", 3-4 minutes
Place ham mix on one half of omelette and fold
Let sit in pan to warm through then serve
with Hawaiian music and mango slices
and a portable heater blowing in your face if its cold so you can imagine you are there again.
