04-07 Nachos Rapidos

Layer layer layer!
On a small plate layer
your chips- Costco has some good whole grain at the moment
red kidney or black or pinto beans
and/or
shredded cooked chicken
grated cheese
Place in microwave for 45 seconds or so
When cheese is melted, layer with
chopped tomatoes
chunky mango salsa or pico de gallo
avocado or guacamole
chopped lettuce
torn cilantro
sliced black olives
squish a half a lime on top
Enjoy with your favorite TV show or movie and forget about finals for a while.
Maybe a bit of sour cream if it tastes dry to you.
FYI-the first "Nachos" were made in 1943 in Piedras Negras, Mexico just over the border from Texas. Tortillas were cut into triangles, sprinkled with longhorn cheddar and jalapeños and warmed. That scary, oozy cheese didn't appear until 1977.

 Cousins in Sweden served a fish meal that B really liked!  [That is a huge compliment as it's not her favorite protein.]  Nic makes it without a recipe so this is a general guide.  Layer a casserole with a bed of zucchini slices and add a layer cod pieces . Mix chopped flat leaf parsley (handful), softened butter (abt. 2 T), horseradish sauce (abt. 1 T) with a brick (8 oz) of cream cheese.  {It is easier if the ingredients are room temperature} Cover fish with sauce and bake for about 25 minutes at about 325-350 degrees [Swedish measurements are not equivalent]  Thin sauce with milk if needed. Serve with new baby potatoes baked in butter and dill and salt.

01-25 Dad's Quick Italian Meatballs

Mix 1 lb lean ground beef 2 eggs 1 c Italian bread crumbs 1/2 c spaghetti sauce (more or less, see how it looks) The longer you mix/beat them, the more tender they will be Form meatballs and bake at 350F about 12 minutes Use in meal immediately or freeze for later Put in spaghetti or any pasta will work. Meatball sandwiches would be good too!

 Hot Chocolate from scratch makes it easier to serve a group all at the same time Melt 1/2 lb dark chocolate pieces in  1 quart of milk Stir constantly to almost a boil - careful not to burn the bottom Remove from heat Toppings: whipped cream or frozen coconut cream orange zest cinnamon, cardamom, saffron
