04-02 Pizza Pot Pie

Saute in olive oil:
2 oz pancetta or Canadian bacon (optional but adds flavor)
3 cloves garlic, minced
When glistening, add
1 T rosemary or few fresh sprigs
Salt and pepper
Stir well and add
1 14 oz can tomatoes, crushed
Simmer med-lo 15 minutes

In mixing bowl, stir together
1 1/2 c mozzarella, cubed
3 c broccoli florets OR
large handful of baby spinach, chopped AND
2 med zucchini, cubed (or all of it)
2 c cooked chicken, diced
Pour sauce and mix together
Fill 6 - 10 oz ramekins or other small oven-safe dishes
(the larger the dish, the longer you will need to bake it.)

Roll out pizza dough (made or store bought-enough for one large) to 1/4" thick
Cut shape of baking dishes. (circles for ramekins)
Place dough shapes on top of baking dish. Edges should hang over the sides
Brush olive oil over top of dough. Slit tops and sprinkle with Parmesan
Bake 400 degrees for 25+ minutes until dough is golden.

*You can bake everything without the dough and serve over pasta, toasted sourdough, etc.

01-25 Dad's Quick Italian Meatballs

Mix 1 lb lean ground beef 2 eggs 1 c Italian bread crumbs 1/2 c spaghetti sauce (more or less, see how it looks) The longer you mix/beat them, the more tender they will be Form meatballs and bake at 350F about 12 minutes Use in meal immediately or freeze for later Put in spaghetti or any pasta will work. Meatball sandwiches would be good too!
