09-23 Lemon garlic broccoli

I know.... but its good to have some ways to eat it, especially in season.

Steam about
2 c broccoli florets and peeled stems pieces, cut in same size pieces

Saute over med. heat:
1 clove garlic, minced
1 t unsalted butter
1 t olive oil
When garlic is softened, add:
1 1/2 T lemon juice
2 t capers, drained
a few olives, sliced
Heat until warm, just a couple of minutes then
pour over steamed broccoli and toss.
Season with salt and pepper, as needed.

01-25 Dad's Quick Italian Meatballs

Mix 1 lb lean ground beef 2 eggs 1 c Italian bread crumbs 1/2 c spaghetti sauce (more or less, see how it looks) The longer you mix/beat them, the more tender they will be Form meatballs and bake at 350F about 12 minutes Use in meal immediately or freeze for later Put in spaghetti or any pasta will work. Meatball sandwiches would be good too!
