11-23 Day after Turkey Noodle Soup

A Grandma & Grandpa Cooper tradition for the day after Thanksgiving. In a stock pot, we would put the turkey bones, giblets and any other parts along with a couple of onions (peeled and halved), carrots, and celery stalks. Cover everything with water, add some salt and allow to boil for an hour or so. Discard all the solids by straining the liquid and use it as your broth base for the soup. If you don't have a turkey carcass lying about, just use chicken broth as your base.

Make the noodles-
Mix together:
1 egg
2 T milk
1 c flour
1/4 t salt
You can flavor the noodles with onion powder or celery salt if you'd like
Roll dough out flat and cut into squares or strips.
Set aside while you prepare the veggies.

Prepare the vegetables:
1 onion, chopped
2-3 celery stalks, chopped
2-3 carrots, coined or chopped
and any others you want to add...
Sauté these veggies in the bottom of a stockpot in canola oil until slightly softened.
Add prepared turkey (or chicken) broth and
about 1 c cooked turkey, shredded or chopped (or chicken)
2-3 bay leaves
a few peppercorns
Bring all to a boil and then Reduce to a simmer.
After about 10-15 minutes, when the veggies are nearly ready, add fresh noodles.
Simmer until noodles are cooked through.
Season with salt and pepper.

Swedish almond cake = nötkaka

How did I miss putting this recipe on here years ago?! There are several versions. The original here is from the Swedish classic Sju Sorters Kakor. For presentation it is baked in a special ribbed pan - widely available and not expensive - called a Swedish/Rehrucken/Almond cake loaf pan.  They are about 4.75 x 12.25 inches & 2 inches deep.  It also works in a similarly sized baking dish or cake round, you just won't have the ribbed design.  Prepare cake pan with a light coating of oil or oil spray, as you want to be able to invert it after baking to present it with the pattern.
