In saute pan, saute:
1 T EV Olive oil
1 lb lean ground beef
1/2-1 c onions, chopped
1/2 - c carrots, chopped
1/2 -1 c celery, chopped
When beef is cooked, sprinkle on
1/8 c flour and pour in
1 c chicken stock
Cook until begins to thicken, season with
1 t dried thyme or 1 T fresh, minced
1/2 t salt
1/2 t dried rosemary or 1 T fresh, minced
1/4 t pepper
Stir and add:
1/2 c frozen petite peas, thawed
1/2 c frozen petite corn, thawed
Stir well. Remove from heat. Spread evenly in two 8x8 pans
Layer on top of each meat mixture 1 c leftover mashed potatoes or reconstituted potato pearls
Sprinkle Asiago and/or Parmesan on top
Drizzle with EV Olive oil and
sprinkle with paprika
Bake 20-25 min at 350 F
