27 Oct 2015 SERIOUSLY Good Oatmeal

Seriously Good Oatmeal - not soggy, but chewy and full of whatever you love or are in the mood for that morning.
You can make ahead and store it in the fridge.
Put it in the oven while you get ready in the morning.
It is a win-win, lasts you until lunch.

In an oven proof baking dish, 9 x 13 or so, stir together:
2 c oats, rolled, quick or instant
1 t baking powder 
1 t salt

In a small mixing bowl, combine:
2 c almond milk, milk, cream, water or combination 
3 T coconut oil or melted unsalted butter 
Pour liquid over oatmeal and mix well.

Now choose your flavors,
whatever combination appeals or ingredients you have, add on top of oatmeal Combine all lightly:
1-2 eggs, (mix well into milk mix if using)
1 c fresh or frozen fruit:  blueberries, peaches, apples, etc.
1-2 bananas, sliced
1/2 c shredded unsweetened coconut
1/2-1 c sliced or chopped nuts:  almonds, pecans, hazelnuts, walnuts, etc.
1/4-1/2 c unsweetened chocolate, toffee, chips or chunks  (dark is best)
1 t nutmeg, cinnamon, or allspice or...
citrus zest
Sweetener -  can always add a sweetener later

Bake at 350 degrees for 30-40 minutes
Serve in a bowl with milk poured over it

My favorite combos so far were:

Blueberries, dark chocolate, walnuts, banana

Peaches, pecans, banana, coconut, nutmeg

apples, hazelnuts, dark chocolate, banana, extra cinnamon

Mix together: 1/3 c olive oil 3 T red wine vinegar Freshly & finely chopped chives or 1/4 t onion powder  Salt and pepper to taste Set aside. Nordic curry

This is a mild anytime curry.  Takes 10-15 minutes. The original (dairy) sauce is from Magnus Nilsson. I double the sauce so there's plenty. Especially because I like to add vegetables and proteins. I always add the apples, sometimes skip the onion. Leftover roasted root vegetables tasted great. Regular supermarket yellow curry powder is perfect. Serve it over rice or with naan. Be generous with the salt and pepper.  Melt 4 T butter over medium heat in a sauté pan (wide, shallow).  Sprinkle in 4 T yellow curry powder and stir to combine.  Add 1-2 tart apple (Granny Smith), cored and chopped or cubed & 1 onion, finely chopped. When apples and onion are softened, sprinkle them with 2 T flour . Stir to evenly coat all.  Add 1 1/2 c heavy cream OR coconut cream , slowly, a bit at a time, whisking constantly to keep lumps at bay. Berry Birthday Tart

  Birthday Berry Tart I was intimidated watching bake-off and professionals make tarts but it turns out making a fruit tart is do-able! After looking at a few different recipes, I came up with this version to pack more flavors into the tart shell, which turned out tasting great, thankfully :) Take your time. Watch different videos about technique if you are needing more tips. It is not a quick process.
