07-09 Greek burgers

Its still summertime so another excuse to eat outside are these burgers that are Greek inspired, Play with the herbs to create what you like best. Let soak for 5 minutes: 1/2 c bread crumbs 1/2 c milk Saute 1 small onion 2 cloves garlic when onions soften, add in 4-6 oz baby spinach, chopped stir 1-2 minutes more then add to crumb mixture Then mix in 1 lb ground lamb, beef or turkey 2 T fresh mint, chopped 4 t fresh oregano, chopped 1 T lemon juice 1 T olive oil Combine well in mixer if possible to tenderize Then make patties and grill Serve with fresh tomatoes, thin slice of red onion, arugula and feta on top. I think I will add dill to the next batch and see what that tastes like.

07-08 Tempeh Puff Pastry Pizza

For that other sheet of puff pastry... Saute in sauce pan 1/2 onion, chopped olive oil or use onion powder instead in the following Add in 1 can tomato sauce 1 T or so Italian seasoning 2 cloves garlic, minced or garlic powder 1 sheet of Italian seasoned tempeh, thawed and cubed 1/4 c fresh (or not) mozzarella cheese, crumbled or shredded salt and pepper to taste Combine well and remove from heat when seasoned to taste. Roll out thawed puff pastry sheet to fit cookie sheet (with silpat) put a THIN layer of sauce evenly over dough generously layer about 1-2 c baby spinach , chopped Sprinkle with shredded Parmesan Drizzle all with olive oil , covering edges well. Bake at 450 degrees for 20-25 minutes. Its messy but delicious!

07-07 Asparagus Puff Pastry Pizza

Saute 5 slices of bacon or 5 T of real bacon crumbles If using crumbles, add 1 T olive oil If using bacon, wipe out almost all the bacon grease when bacon is crispy. Set bacon aside (and chop slices) Then saute: 1 shallot or 1/2 small onion, chopped about 1 minute, then add 1 bunch/lb of asparagus, cut into 1" pieces Cook over med-hi heat until almost tender - 5 min or so Remove from heat and add in bacon. Roll out 1 sheet of frozen puff pastry , thawed and place onto rectangle cookie sheet (use your silpat) Sprinkle 1/2 lb feta, crumbled over pastry, then spread asparagus mixture overall evenly. Drizzle all with olive oil , especially the edges. Bake in 450 degree oven for 20-25 minutes.

07-06 Butterbeer!!

Bri cut this out of the newspaper. Combine in sauce pan: 1 c brown sugar 2 T water Bring to a gentle boil over medium heat, stirring often. Use a candy thermometer and when its 240 degrees, stir in: 6 T butter 1/2 t salt 1/2 t cider vinegar 1/4 c heavy cream. Remove from heat and set aside to cool to room temperature. Then stir in 1/2 t rum extract or 1/4 t orange extract In a medium bowl, combine 2 T of the cooled sugar mix and 1/2 c heavy cream 2-4 drops of rum extract beat but do not whip, about 2-3 minutes. It will form a very soft peak. The recommended serving size is: divide the sugar mix into 4 glasses and stir in 1/4 c cream soda in each. Stir a little, then pour in additional cream soda and top with cream mixture. It is so strong and sweet, you can just 1/2 it and have 8 servings, which is plenty strong! Stir it a bit to make foam if you want foam on your nose like Hermoine.

07-05 Ajlouk Qura'a (zucchini salad)

This is a Tunisian dish pronounced "aj LUKE coo rah AAH" Steam 1 1/4 lbs zucchini, 1" slices then smash with fork Meanwhile, make dressing: 1 T fresh lemon juice 1 T EV Olive oil 1/2 t salt 1/2 t caraway seeds 1/2 t ground coriander 1 garlic clove, minced 1/4 c crumbled herbed feta Mix well and combine with smashed zucchini until incorporated. You can spice this up to be more authentic with ground chile powder if desired.

07-04 4th Burgers

These are so nice to eat because the spinach breaks up the meat. They are also tenderized by the mixer. Per 1 lb of ground beef use 1 T meatloaf seasoning (see 01-24 entry) & 2 c packed fresh baby spinach, chopped Combine and beat in mixer until meat looses pink color Form into patties and throw on the grill. Sprinkle crumbled feta on top for the last 2 minutes of cooking or just as they are removed and let rest to warm the feta. Serve on buns with lettuce and tomato, etc... If you bake them, form into patties that are thinner in the middle (like a red blood cell) and bake at 375 for about 15 minutes. Add cheese for the last 3 minutes.

07-03 Blondies

These brownies have a butterscotch flavor, just pure treat. Mix together 2 c flour 1 1/2 T baking powder 1/4 t salt 1/2 c flaked unsweetened coconut 3/4 c nuts, chopped 2 c brown sugar Then add 3/4 c unsalted butter, softened 2 eggs, beaten 2 t vanilla Blend well and spread in 9x13 pan Bake 25 minutes at 375 degrees Tastes great warm with ice cream.

07-02 Picnic Coleslaw

We have been searching for a non-mayo coleslaw... this is the winner so far. This reminds me of the traditional Swedish Christmas salads we experiment with. Mix together: 1/2 c plain yogurt 1/4 c sour cream 2 t honey 3 T minced onion 2 T chopped parsley 2 T lemon juice Combine with: 2 c shredded red or green cabbage 1 Granny Smith apple - peeled, cored and chopped 1/4 chopped nuts like almonds, cashews, etc. salt & pepper to taste I think grapes and some other things would taste good in here...feel free to experiment. I still am and this recipe will most likely evolve or change altogether.

07-01 Quick Baked Beans

With July 4th coming up, here are a few outdoor bbq/picnic recipes we eat around here. It wouldn't be the same for dad without baked beans. This is a 'cheater' version, the real authentic baked beans take hours. I haven't made them. Saute in a teeny bit of olive oil in a large sauce pan: 3 slices bacon, cooked crisp & crumbled OR 3 T of real crumbled bacon* 1/2 c onion, chopped Turn heat to low and add: 1 can baked beans (I found organic...) or pork and beans would work 1/4 c ketchup 2 T molasses 2 t mustard 1 t Worcestershire sauce Combine well and let simmer about 15 minutes. *If you use raw bacon, saute the onion in the bacon pan after barely wiping out the bacon fat. I doubled this recipe but only had 1 can of baked beans so I just used a can of pinto beans, (drained), for the other can and it tasted the same. You could add almost any bean is its place.
