Quick Pumpkin Curry

 Quick, simple and hearty - tastes even better with a crusty sourdough bread. Saute over med-hi heat: 2 Tb olive oil 1/2 onion, chopped When the onion glistens, add 1 Tb minced ginger 1 Tb minced garlic 1/2 lb chicken, cooked, shredded or cubed Stir to combine. Then add: 2 Tb curry powder 1 tsp coriander, ground 1/2 tsp cinnamon, ground 1/4 - 1/2 tsp salt Combine well then add 16 oz pumpkin puree  1/2-1 cup coconut milk. Simmer another 10 minutes or so and serve.  Found the recipe in the costco magazine
