Saute
5 slices of bacon or 5 T of real bacon crumbles
If using crumbles, add 1 T olive oil
If using bacon, wipe out almost all the bacon grease when bacon is crispy.
Set bacon aside (and chop slices)
Then saute:
1 shallot or 1/2 small onion, chopped
about 1 minute, then add
1 bunch/lb of asparagus, cut into 1" pieces
Cook over med-hi heat until almost tender - 5 min or so
Remove from heat and add in bacon.
Roll out 1 sheet of frozen puff pastry, thawed and place onto rectangle cookie sheet
(use your silpat)
Sprinkle 1/2 lb feta, crumbled over pastry,
then spread asparagus mixture overall evenly.
Drizzle all with olive oil, especially the edges.
Bake in 450 degree oven for 20-25 minutes.
