07-01 Quick Baked Beans

With July 4th coming up, here are a few outdoor bbq/picnic recipes we eat around here.
It wouldn't be the same for dad without baked beans.
This is a 'cheater' version, the real authentic baked beans take hours. I haven't made them.

Saute in a teeny bit of olive oil in a large sauce pan:
3 slices bacon, cooked crisp & crumbled OR 3 T of real crumbled bacon*
1/2 c onion, chopped
Turn heat to low and add:
1 can baked beans (I found organic...) or pork and beans would work
1/4 c ketchup
2 T molasses
2 t mustard
1 t Worcestershire sauce
Combine well and let simmer about 15 minutes.

*If you use raw bacon, saute the onion in the bacon pan after barely wiping out the bacon fat.

I doubled this recipe but only had 1 can of baked beans so I just used a can of pinto beans, (drained), for the other can and it tasted the same. You could add almost any bean is its place.

01-25 Dad's Quick Italian Meatballs

Mix 1 lb lean ground beef 2 eggs 1 c Italian bread crumbs 1/2 c spaghetti sauce (more or less, see how it looks) The longer you mix/beat them, the more tender they will be Form meatballs and bake at 350F about 12 minutes Use in meal immediately or freeze for later Put in spaghetti or any pasta will work. Meatball sandwiches would be good too!
