12-03 Fondue!

This is very aprés ski for the season, too. There are many fondue possibilities, this is just a basic recipe for starters and then you can start experimenting.

Heat over medium heat for a few minutes:
1 c milk
1 clove garlic, minced or herbs that smell good to you like dill or rosemary
Toss together in small bowl:
2 T flour
1 lb Gruyére or Jack, shredded
Whisk the cheese into the warm milk, a bit at a time allowing it to melt before adding more.
Now fondue it!

Ideas for dipping:
cubed bread
sliced fruit
ham or chicken cubes
boiled potato cubes
lightly steamed veggies

 Cousins in Sweden served a fish meal that B really liked!  [That is a huge compliment as it's not her favorite protein.]  Nic makes it without a recipe so this is a general guide.  Layer a casserole with a bed of zucchini slices and add a layer cod pieces . Mix chopped flat leaf parsley (handful), softened butter (abt. 2 T), horseradish sauce (abt. 1 T) with a brick (8 oz) of cream cheese.  {It is easier if the ingredients are room temperature} Cover fish with sauce and bake for about 25 minutes at about 325-350 degrees [Swedish measurements are not equivalent]  Thin sauce with milk if needed. 01-25 Dad's Quick Italian Meatballs

Mix 1 lb lean ground beef 2 eggs 1 c Italian bread crumbs 1/2 c spaghetti sauce (more or less, see how it looks) The longer you mix/beat them, the more tender they will be Form meatballs and bake at 350F about 12 minutes Use in meal immediately or freeze for later Put in spaghetti or any pasta will work. Meatball sandwiches would be good too!
