Saute 5 min on Med. heat:
2 T olive oil
2 celery stalks, cubed
1 Carrot, sliced
1 small onion or 2-3 leeks, sliced
Then add:
1 t salt and pepper
4-5 Roma tomatoes, chopped or 1 14.5 oz can chopped tomatoes & juice
14 oz chicken broth
1/2 c fresh basil, torn small
1 t tomato paste
1 bay leaf
1 T fresh thyme, crushed or 1/2 t dry thyme
2 boneless, skinless chicken breasts, cubed if using cooked chicken, add with beans
Simmer uncovered over Med-lo for 20 min.
1 can kidney beans (white or red)
add cooked chicken here
Simmer 5 more minutes
Discard bay leaf
Remove from heat and cool 5 min before serving.
