05-01 Pumpkin Risotto

Ani's bday dinner...

Heat in sauce pan:
4 c vegetable or chicken broth

In large pan, saute:
1 T olive oil
1 onion, diced
1/2 t fresh garlic, minced
When onion is soft, add:
2 c arborio rice
Stir rice to coat with oil, add more oil if needed
Then add
1/4 c white cooking wine
let wine evaporate, stir and then start adding the heated broth 1/2 c at a time
Stir and let arborio rice soak up the broth before adding more broth.
This will take 15- 20 minutes for all the broth to be absorbed.
When finished, add:
about 22 oz pumpkin, cooked and mashed or cubed
1/2 - 1 c chicken, cooked and cubed OR ham or pancetta
1 c baby spinach leaves, chopped (opt)
6 oz feta, cubed and lightly toasted/melted in oven (opt)
Stir well to combine and remove from heat
Add to taste:
salt
pepper
thyme
rosemary

 Cousins in Sweden served a fish meal that B really liked!  [That is a huge compliment as it's not her favorite protein.]  Nic makes it without a recipe so this is a general guide.  Layer a casserole with a bed of zucchini slices and add a layer cod pieces . Mix chopped flat leaf parsley (handful), softened butter (abt. 2 T), horseradish sauce (abt. 1 T) with a brick (8 oz) of cream cheese.  {It is easier if the ingredients are room temperature} Cover fish with sauce and bake for about 25 minutes at about 325-350 degrees [Swedish measurements are not equivalent]  Thin sauce with milk if needed. 01-25 Dad's Quick Italian Meatballs

Mix 1 lb lean ground beef 2 eggs 1 c Italian bread crumbs 1/2 c spaghetti sauce (more or less, see how it looks) The longer you mix/beat them, the more tender they will be Form meatballs and bake at 350F about 12 minutes Use in meal immediately or freeze for later Put in spaghetti or any pasta will work. Meatball sandwiches would be good too!
