02-07 Bri's Birthday Fettucini Alfredo

Boil salted water to cook
8-10 oz fettucini
Alfredo Sauce-
Heat over med-lo heat:
1/2 pint heavy cream
1/4 c unsalted butter, room temperature
Whisk as butter melts then add:
1/2 c freshly grated Parmesan
Continue to stir and add:
Freshly grated black pepper
Remove from heat and pour over cooked fettucini
Garnish with fresh parsley....if you have it
Add petite peas and thinly sliced ham or Canadian bacon
if you want to make it a one-pot meal instead of a side.
This sauce does not reheat well so this is a 2-3 person recipe.
You should halve it if you are the only one eating.

 Cousins in Sweden served a fish meal that B really liked!  [That is a huge compliment as it's not her favorite protein.]  Nic makes it without a recipe so this is a general guide.  Layer a casserole with a bed of zucchini slices and add a layer cod pieces . 01-25 Dad's Quick Italian Meatballs

Mix 1 lb lean ground beef 2 eggs 1 c Italian bread crumbs 1/2 c spaghetti sauce (more or less, see how it looks) The longer you mix/beat them, the more tender they will be Form meatballs and bake at 350F about 12 minutes Use in meal immediately or freeze for later Put in spaghetti or any pasta will work. Meatball sandwiches would be good too!
