Nicola's Fisk

Cousins in Sweden served a fish meal that B really liked!  [That is a huge compliment as it's not her favorite protein.]  Nic makes it without a recipe so this is a general guide.  Layer a casserole with a bed of zucchini slices and add a layer cod pieces . Mix chopped flat leaf parsley (handful), softened butter (abt. 2 T), horseradish sauce (abt. 1 T) with a brick (8 oz) of cream cheese.  {It is easier if the ingredients are room temperature} Cover fish with sauce and bake for about 25 minutes at about 325-350 degrees [Swedish measurements are not equivalent]  Thin sauce with milk if needed. Serve with new baby potatoes baked in butter and dill and salt.

Southwest cornbread - meal or side

This recipe is adapted from a British cookbook that called it Mexican.  Inspired, yes. Authentic, no.  I liked it for an easy lunch or as a side dish to any southwestern inspired salad. Melt 2 T butter in 8-9" iron skillet Sauté 1/2 chopped onion until just turning clear add 1 chopped green chile of choice/ or 1 small can of chopped Hatch chiles Stir to combine then removed from heat.  Add 14 oz corn kernels or drained can of corn kernels 2 T chopped fresh cilantro (+more for serving) Beat 2 large eggs with  1/2 c sour cream or plain skyr or yogurt Stir gently to combine all - Mix 1 cup of polenta (purchased - if in tube, mash with a fork first- with 2 1/2 t baking powder , then stir into corn mixture Add in 1 1/2 c grated cheese - sharp cheddar, white or orange and season with salt and pepper . Place skillet in 350 degree oven for 30 - 40 minutes. Top with a bit more cheese, cilantro, sour cream and fresh avocado slices to serve.  Serves 4-6...

Spring Stew

This was perfect for the beautiful sunny Spring day that still had that cold snap in the air. Saute 1/2 c chopped onion, leek, green onion or pearl onions, etc. in  2 T olive oil & 2T unsalted butter until they glisten Add 3 c vegetable stock,  2 cloves of garlic, minced and bring to a boil. After about 5 minutes (for a bit of reduction) add 1 lb new red baby potatoes, cut in half (or quarters if large) Boil potatoes about 10 minutes then add 2 carrots, cut bite size 3-4 small zucchini, bite size 3-4 small crook neck, bite size Cook for a couple minutes until they start to soften. Then add 1 c green peas and 1 c edamame or fava beans Cook for a few minutes, but keep the peas bright! Just before removing from the heat add 1 t tarragon and 1 t parsley (1 T of each if fresh)  Add salt and pepper to taste. We served it with sweet buns. You can easily add ham, pancetta or chicken if you want but it was surprisingly filling as is.

Eells Slaw

We just ate this on A&A's smoked pork shoulder...  aaah SO delicious! Shred/grate a half a head of large cabbage & 2 large carrots combine with 1/4 white onion, sliced  as thin as possible then combine with 1 Tb dijon mustard, 4 Tb sour cream, 1 ts garlic paste/minced season all with salt and pepper and a splash (or two) of cider vinegar. It will elevate any pulled pork sandwich!  Even paired well with a sweet BBQ sauce.
