Classic Thanksgiving Stuffing

Couldn't find the old recipe on here anyway so time to add it. Nothing special about this version except its the classic.

Saute:
1 c finely chopped celery
1 1/2 c chopped onion
1/2 c unsalted butter
when golden and tender, remove from heat
combine with:
1 c warm chicken or turkey broth
1 t poultry seasoning or dried crushed sage
1/4 c snipped fresh parsley
1/2 T fresh thyme/ 1/2 t dried thyme
1/4 t marjoram
1/4 t black pepper
Pour over
8 c dry bread cubes
Combine gently and add more broth if needed
Add any extras like slivered almonds or dried cranberries, etc. as desired.

 Cousins in Sweden served a fish meal that B really liked!  [That is a huge compliment as it's not her favorite protein.]  Nic makes it without a recipe so this is a general guide.  Layer a casserole with a bed of zucchini slices and add a layer cod pieces . Mix chopped flat leaf parsley (handful), softened butter (abt. 2 T), horseradish sauce (abt. 1 T) with a brick (8 oz) of cream cheese.  {It is easier if the ingredients are room temperature} Cover fish with sauce and bake for about 25 minutes at about 325-350 degrees [Swedish measurements are not equivalent]  Thin sauce with milk if needed. 01-25 Dad's Quick Italian Meatballs

Mix 1 lb lean ground beef 2 eggs 1 c Italian bread crumbs 1/2 c spaghetti sauce (more or less, see how it looks) The longer you mix/beat them, the more tender they will be Form meatballs and bake at 350F about 12 minutes Use in meal immediately or freeze for later Put in spaghetti or any pasta will work. Meatball sandwiches would be good too!
